Carrot Muffins

INGREDIENTS :-

raisins-1/2 cup
cashews-1/2 cup
warm water-2 cups
all-purpose flour/maida -2 cups
baking powder -1 tsp
salt-3/4 tsp
ground cinnamon/dalchina-1 tsp
eggs -4
vegetable oil
sugar-3/4 cup/as per taste
carrots-3

PROCESS:-

1.First grate the carrots and keep aside.

2.Then beat together eggs,sugar and water.

3.Then to that add all purpose flour and mix it well.Then add ground cinnamon pwd.

4.Now to that add the grated carrots and mix it well.

5.Now add half of the raisins and cashews.

6.Take the muffin pan/cup cake pan and grease the bottom with butter/oil and fill the cup cakes till 3/4 only and not completely.(BECAUSE THEY HAVE THE TENDENCY TO RAISE )And sprinkle the rest of the raisins and cashews on the top.

7.Preheat the oven to 350 F or 180 C for about 10-15 mins.Then place the muffins in the oven and bake them for about 20-30 mins/till the tooth pick inserted in to the muffin comes out clean without anything sticking to it.

8.Let it rest for 10 mins.Then remove muffins from the pan n enjoy!!!!!

U WILL SEE CHILDREN WILL LOVE TO EAT THIS CARROT MUFFINS

Tomato Masala Uttappam

Its one of the instant breakfast that we can get ready in about 1o mins.Its very easy n tasty recipe too....

INGREDIENTS:-

Rice flour/Biyyam pindi- 3tsp
maida/all purpose flour-3tsp
senaga pindi or besan-1 tsp
onion-1
Tomato-1
green chillies-2
coriander/cilantro-handful
ginger-1/2 inch piece
jeera-1 tsp
curry leaves powder(karvepaku podi)-1 tsp (optional)
salt
oil

PROCESS:-

1.cut onions ,tomatoes, coriander ,ginger n green chillies into small pieces as shown here.

2. Now add all the above ingredients including riceflour,besan,maida , jeera n salt except oil with enough water to make it into a dosa batter consistency.

3.Now ,heat the pan n spread the mix on the pan like a dosa n put sum oil on the sides..

4. When one side gets roasted,turn on to the other side.n u'l notice that it looks very color ful too..


SERVE IT WITH PEANUT CHUTNEY .TASTES VERY DELICIOUS.










Mamidikaya Pappu/Mango with Toordal

INGREDIENTS:-

Toor dal/kandi pappu- 1cup
Mango -1( cut into small pieces)
tomatoes-1
chilly pwd- 1tsp
turmeric pwd- 1tsp
salt- to taste
green chillies -2
tamarind- small lemon size ball ( if needed only -if the mango is not that sour)
Oil- 2 tsp

FOR SEASONING:-

Urad dal- 1 tsp
Chana dal - 1 tsp
Cumin seeds-1 tsp
Mustard seeds- 1 tsp
curry leaves-6-7
red chillies-3
garlic cloves (crushed)-3
Hing /inguva- a pinch

PROCESS:-

1.Cut the mango ,tomatoes n green chillies as shown below.(or u can even grate the mango )

2.Pressure cook toor dal with enough water.
3.After the toor dal is cooked,mash it with a spatula n add mango , tomatoes , green chillies,salt ,turmeric pwd, n add enough water n let it cook till the mango pieces become soft.

4.Now take a pan n put 2 tsp of oil n do the seasoning .

5.Add it to the above cooked toor dal.

SERVE IT WITH HOT RICE AND AVAKAI /MANGO PICKLE...TASTES SUPERB

Mumbai Pav Bhaji

INGREDIENTS:-

pav bread /Hamburger rolls-6
Potato (skin peeled n cut into pieces)-1
carrot(skin peeled n cut into pieces)-1
cabbage - 1 cup
cauliflower - 1 cup
onion-1
tomato -1/2
green chillies -2
turmeric pwd- 1/4 tsp
chilly pwd- 1 tsp
salt- to taste
oil-3 tsp
Ginger-garlic paste-1 tsp
Cumin seeds-1/2 tsp
cumin pwd- 1 tsp
coriander/ dhaniya pwd- 1 tsp
garam masala pwd- 1 tsp
butter -3-4 tsp
coriander- handful
red food color -2-3 drops
lemon juice-1 tsp

PROCESS:-

  1. Cut potato ,cabbage,carrots , cauli n pressure cook them with enough water n salt till 3 whistles.
2. Now cut onion tomatoes n green chillies into small pieces.

3.Heat a pan ,add oil / butter ( as per ur taste ) n add cumin seeds n let dem splutter.Then to it add onions,green chillies n fry til they turn golden brown.
4.Den add ginger garlic paste,n tomatoes n saute for a minute.

5.Now add all the pwds n mix well n add sum water n let tomatoes cook for 5-6 mins
6.Now add the pressure cooked veges saute them for 5 mins.
7.Now take a spatula n mash the mixture n den again fry for 5 mins.DO check for salt in between.
8.Now add 2-3 tsp of butter , red food color n mix it well.
9.Atlast add chopped coriander n 1 tsp of lemon juice n switch of the flame.

9.Now take another pan n put 1 tsp butter n put pav bread n fry it for few seconds.

Now serve the pav with bhaji n onions n ENJOY........

NOTE :- IF U DONT HAVE PAV BREAD ,U CAN ALSO USE HAMBURGER BREAD/ROLLS ,I TRIED IT. IT EQUALLY TASTES GOOD.

Guvar/Cluster Beans Fry

INGREDIENTS:-

guvar/cluster beans/gorchikkudukaya-1 lb (cut into small pieces)
red chillies-3 (u can increase according to ur taste)
jeera/cumin seeds-1/2 tsp
garlic cloves/vellulipayalu-4
salt-as per taste
turmeric pwd-1/4 tsp
grated coconut(fresh/frozen)-3 tsp
peanut powder-2 tsp
oil-2 tsp

PROCESS:-

1.Clean and cut guvar and boil it with enough water in a pan with some salt and turmeric pwd for about 20 mins.

2.Take red chillies,cumin and garlic cloves in a mixer/blender and make it into a paste.

3.Keep the paste aside.

4.Heat a pan, add oil and fry the grinded paste for about 2 mins.(Make sure that that it doesn't get burnt).

5.Now add the boiled cluster beans and fry for about 20-25 mins/ till they become soft.

6.Now add enough salt,peanut powder and grated coconut and mix well and switch off the flame and serve


SERVE WITH HOT RICE AND TASTY SAMBHAR BY SIDE.....

Drumsticks N Cashews Curry With Milk

INGREDIENTS:-

Drumsticks-2
onions- 2
tomatoes-1
cashews-1 cup
mustard seeds-1 tsp
curry leaves
milk -1 cup
chilly pwd- 1 tsp
turmeric pwd- 1/4 tsp
salt- to taste
oil- 3 tsp

green chillies- 3


PROCESS:-

1.Cut onions (slit length wise),tomatoes ,green chillies and drumsticks and keep aside.


2.Heat a pan ,add oil .Fry cashews first and keep aside.Then add mustard seeds and let it splutter .Then add curry leaves.

3.To that add onions n green chillies and fry til onions turn golden brown.Then add tomatoes and let it cook for 5-7 mins.

4.Then add turmeric,chilly pwd,salt ,cashews n drumsticks n fry for 5 mins n mix it well.

5.Add 3/4 glass of water and let it cook till drumsticks become tender.

6.Atlast add milk and stir continuously so that it doesnot curdle till we get a thick consistency .
7.Finally add chopped coriander and switch of flame and serve.

SERVE WITH HOT RICE.






Potlakaya Perugu Pachadi

INGREDIENTS:-

potlakaya/snake gourd-1
green chillies-3 to 4
curd-4 to 5 tsp
ginger-1 inch
salt-to taste
turmeric pwd-1/4 tsp
oil

FOR SEASONING:-

mustard seeds/aavalu-3/4 tsp
jeera/cumin seeds-1/2 tsp
menthulu/fenu greek seeds-1/2 tsp
curry leaves- a few

PROCESS:-

1.Peel off the skin of snake gourd and chop into small pieces.

2.Heat a pan ,add oil and fry green chillies and keep aside. In the same pan,add the oil and do the seasoning.

3.Then add chopped snake gourd pieces ,turmeric pwd and fry till the pieces turn soft and keep aside.

4.Mean while,in a mixer grind green chillies and ginger and keep aside.
5.Now take curd in a bowl and beat it well.

6.To that add grinded ginger-green chillies paste,salt and mix well.

7.Now to that add the fried snake gourd piecesn mix well.

8.Mix it well ,check for salt and then serve.
SERVE IT WITH HOT RICE.TASTES AWESOME...

Ridge Gourd/Beerakaya Fry With Egg Scrambled

INGREDIENTS:-

Ridge gourd/beerakaya-2
onions-1
green chillies-2
egg-2
turmeric pwd-1/2 tsp
salt-to taste
oil

FOR SEASONING:-

Mustard seeds/aavalu-1 /2 tsp
chana dal/pachi senaga pappu-1 tsp
urad dal/mina pappu-1 tsp
red chillies/yendu mirchi-2
curry leaves-few

PROCESS:-

1.Cut onions,green chillies and ridge gourd (skin peeled ) into small pieces.

2.Heat a pan ,add oil and do the seasoning.Then add onions,green chillies n fry till theonions turn golden brown.

3.Then add chopped ridge gourd n fry for 5 mins. Then add turmeric pwd,salt and mix well.
4.Mean while,beat the egg and add salt ,1 tsp chilly pwd n 1/4 tsp turmeric pwd n keep aside.
5.When the ridge gourd pieces turn soft ,add the beaten egg n let it stand for 2 mins n then mix it well.

6.Now when its done ,switch of the flame n serve

SERVE WITH HOT ROTIS / RICE...



Crispy Namak Para

INGREDIENTS:-

All purpose flour/maida-1 cup
ajwain seeds/wamu-1/2 tsp
salt-to taste
water-for making dough
oil

PROCESS:-

1.In a bowl take maida,salt,ajwain seeds and 2 tsp of oil and knead into a soft dough by adding little water.

2.Make a big round out of it n roll in like a chapathi on a flat surface.

3.Now cut them into what ever shape u like.(diamonds/squares/any shape)

4.Heat a pan with oil.When the oil gets heated up, put the namak paras and fry till golden brown.

SERVE IT AS IT IS OR WITH TOMATO KETCHUP.
NOTE :- WE CAN ALSO STORE THIS UPTO 1-2 WEEKS IF U KEEP THEM IN AN AIR TIGHT CONTAINER.
